Paleo Pulled Pork Shoulder

All meat is pretty much Paleo... We tried to get as much flavor into the meat without the BBQ sauce.


  • 3-6 pound pork shoulder roast (some fat on the outside)
  • 2 tbsp chili powder
  • 2 tbsp granulated garlic
  • 2 tbsp freshly ground pepper
  • 2 tbsp sea salt
  • 1 tsp dry mustard
  • hickory or apple wood chips

  1. Soak the wood chips for 30 minutes, then drain
  2. Make sure the pork is completely dry before starting (pat dry with a paper towel)
  3. Mix the spices together to create a rub and apply to the dry pork shoulder
  4. Let the rubbed shoulder sit for at room temperature for about 30 minutes
  5. Prepare the smoker for an indirect heat of 225-250 degrees
  6. Slowly cook the pork shoulder (covered) for about 8-10 hours or until the roast reaches an internal temperature of 190 degrees and is falling apart tender in some parts
  7. Transfer the roast to a sheet pan and cover in tin foil and let rest for another 30 minutes
  8. Unwrap the roast and pull the meat apart with 2 forks
