This is a refreshing summer favorite converted to a paleo friendly version. This gluten free / dairy free sorbet just uses four ingredients and tastes absolutely delicious and can be kept frozen for about a week without losing its taste.
If you don’t plan on serving it right away, transfer the paleo watermelon sorbet to a freezer-proof container and freeze up to a week. Makes about a quart.

Ingredients
- 12⁄3 cups water
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 11 cups fresh seedless watermelon

Directions
- in a blender or food processor, blend all ingredients together until mixture is smooth (about 20-30 seconds)
- Cover and chill overnight
- For best results, place the mixture into an ice cream maker (for as long as the maker requires)
